  1. 1/4 cup butter

  2. 1 1/2 pounds boneless chicken breasts or tenders, cubed

  3. 1 package (10 ounces) frozen spinach

  4. 1/2 cup coconut milk

  5. 1 large clove garlic, minced

  6. salt and pepper

  7. slivered toasted almonds, optional

  1. Heat onion in a large skillet and add chicken; stir fry until chicken is white and cooked through. Cook spinach with coconut milk; add to chicken. Season with salt and pepper and garnish coconut chicken with nuts.

  2. Serves 6.
