  1. 1 1/2 pounds ground round

  2. 1 zucchini ,

  3. 1-1 1/2 feet long

  4. 1/2 cup zucchini pulp and seeds

  5. 1 onion , chopped fine

  6. 3 cloves garlic , chopped fine

  7. salt and pepper, to taste

  8. 1 1/2 cups seasoned bread crumbs

  9. 1 cup water

  10. 2 egg s

  11. 1 recipe meat sauce

  12. 1/4 cup olive oil

  13. 1/4 cup tomato es, crushed

  1. Wash zucchini, pare, and cut into 3" long pieces. Cut out seeds with knife, making pieces hollow.

  2. Combine chopped meat, zucchini pulp, onion, garlic, salt and pepper, bread crumbs, water, eggs, and ¼ cup of tomatoes.

  3. Stuff zucchini pieces and brown the two open sides in oil. Add to meat sauce (or if you’re Italian: gravy) and cook for 45 minutes.
