  1. 1 1/2 cups 93g / 3 1/3oz All-purpose flour

  2. 1/3 cup 65g / 2 1/3oz Sugar

  3. 1 1/2 teaspoons 7 1/2ml Baking powder

  4. 1/4 teaspoon 1 1/3ml Baking soda

  5. 1/4 teaspoon 1 1/3ml Salt

  6. 1/2 cup 99g / 3 1/2oz Unsalted butter - (1 stick)

  7. 1 cup 237ml Sour cream

  8. 1 cup 198g / 7oz Egg (large)

  9. 1 teaspoon 5ml Vanilla

  1. Preheat oven to 400 degrees and line 12 (1/3-cup) muffin cups with paper liners.

  2. Into a bowl, sift together flour, sugar, baking powder, baking soda, and salt. Melt butter and in a small bowl whisk together with sour cream, egg, and vanilla. Stir butter mixture (and additional ingredients; see comments, below) into flour mixture until just combined. Divide the batter among muffin cups (this batter is thick and will not run easily like other muffin batters) and bake in middle of oven until golden and a tester comes out clean, about 20 minutes.

  3. This recipe yields 12 muffins.
