  1. 1 cup 110g / 3.9oz Bisquick baking mix

  2. 3/4 cup 148g / 5 1/5oz Sugar

  3. 1/4 cup 49g / 1.7oz Butter - softened

  4. 1 teaspoon 5ml Vanilla

  5. 3 Eggs

  6. 1 Apricot halves - drained

  7. 1 Evaporated milk

  8. 1/2 cup 118ml Apricot preserves

  1. Heat oven to 350F. Grease a pie plate, 10 X 1-1/2 inches.

  2. Mix all ingredients except the preserves in a blender container until smooth, approximately 1 minute.

  3. Pour into the pie plate.

  4. Bake until a knife inserted in the center comes out clean, about 40 minutes; cool completely.

  5. Heat the preserves over low heat until melted. Spread over the pie; cool.
