  1. 1 1/2 pounds ground beef thawed

  2. 1 lg onion chopped

  3. 3/4 c water

  4. 1-14 oz can diced tomatoes undrained

  5. 1-10 oz can diced tomatoes w/green chilis undrained

  6. 1/2 lb frozen corn

  7. 2-15 oz cans black beans drained and rinsed

  8. 1 c salsa

  9. 1/2 t garlic powder

  10. 1 t ground cumin

  11. salt & pepper to taste


  13. chopped fresh cilantro

  14. sour cream

  15. shredded mexican cheese blend

  1. Preheat large stock pot or dutch oven over med-high heat while chopping onions. Spray with non-stick cooking spray and drop onions into pot. Saute' about 1 minute until onions begin to soften. Add ground beef. Stir and cook until meat is no longer pink (drain fat if necessary). Add water, vegetables, beans, salsa, garlic powder, cumin, salt and pepper. Bring to a boil. Reduce heat, cover and simmer 20 to 30 minutes. Yield: serves 8 Notes: Serve hot with optional garnishes and fresh baked corn bread for a satisfying meal.
