  1. 4 Tender steaks (loin or rib)

  2. 2 tb Minced garlic

  3. 1 ts

  4. Bottled red chile flakes 1/2

  6. Black pepper

  7. 1 French bread loaf

  8. 2 tb Butter or margarine

  9. 2 tb Chopped California ripe olives

  10. 1 tb Minced cilantro

  1. Trim steaks well.

  2. Mix 1 tablespoon garlic with chile flakes and black pepper with back of spoon, making paste.

  3. Rub on both sides of steaks.

  4. Cut 4 thick (1") slices of bread on a sharp diagonal.

  5. Melt butter and mix in olives, cilantro and remaining 1 tablespoon garlic.

  6. Grill or broil bread just long enough toast both sides (if broiling, it may be easier to drop broiler rack down a notch before toasting bread).

  7. Spoon olive butter over bread.

  8. Place toast on plates and top with steaks.

  9. Cooking time: 7-10 minutes.

  10. Total preparation time: 15 minutes.
