  1. 50 g butter

  2. 1 cloves garlic , crushed

  3. 1 chilli , seeds removed and chopped finely

  4. 4 fillets of mackerel

  5. 1 lemon , juice only

  1. Heat a frying pan on a medium-high heat then drop in the butter, garlic and chilli.

  2. Once the butter begins to foam add the mackerel skin side down for two minutes and season with salt and freshly ground black pepper. Turn the fish over, squeeze the lemon juice on to it and cook for a further 2 minutes.

  3. Remove the mackerel and place on 2 plates. Drizzle the chilli butter over the fillets.
