  1. 300g pork escalopes, sliced into strips

  2. Marinade:

  3. 4 cloves garlic , crushed and finely chopped

  4. 1 tablespoon ginger , freshly grated

  5. 1 tablespoon yellow bean sauce

  6. 2 tablespoon light soy sauce

  7. 1 tablespoon dark soy sauce

  8. 1 teaspoon shaoshing rice wine

  9. 8 wooden skewers soaked in water

  10. 400g cooked egg noodles tossed in sesame oil

  11. peanut sauce:

  12. 1 tablespoon groundnut oil

  13. 2 shallots , peeled and finely chopped

  14. 3 tablespoon crunchy peanut butter

  15. 1 red chilli, deseeded and finely chopped

  16. 1/2 teaspoon ground cumin

  17. teaspoon ground coriander

  18. teaspoon ground lemongrass

  19. teaspoon sugar

  20. 50ml vegetable stock

  21. Small handful raw beansprouts

  22. Small handful grated carrots

  23. Small handful coriander

  24. Pickled red cabbage

  25. To serve:

  26. Roasted salted peanuts , crushed in a bag with a rolling pin

  27. Wedge of lime

  1. Make the marinade for the pork (overnight).

  2. Skewer the pork and cook on a griddle pan until cooked about 5 minutes, first on high heat then place on medium heat – brush with some marinade and cook until sticky, like teriyaki.

  3. Meanwhile, heat a wok or pan and add the peanut sauce ingredients, then add the cooked noodles to it, then mix with vegetables and herbs, place the skewers on top of the noodles and vegetables and sprinkle with roasted salted peanut and wedge of lime.
