  3. 1 Carrot; grated

  4. Juice from (8?) limes

  5. I can never put in enough

  6. Serrano chillies

  7. OR- other hot chili pepper,

  8. preferably fresh,

  9. but powdered will do)

  10. also cubed to bite size.

  11. Chicken

  12. 4 cn Coconut milk

  13. -(the unsweetened kind)

  14. 3 tb Chopped scallions

  15. 1 ts TO

  16. 3 ts Lemon grass

  17. Cilantro (pref. fresh)

  18. Tofu

  19. cubed into smallish pieces

  20. 1 ts Galanga powder

  1. Heat the coconut milk in a pot.

  2. Add everything else.

  3. As the lemon grass is inedible, put it in a tea ball and immerse the ball in the soup so you can retrieve it later.

  4. Cook until the chicken is done and the soup is hot (30 minutes?).

  5. Taste to see if it needs more limes (it always does) or more hot peppers (it's better to start mild and build up to the desired level of spicyness).
