  1. The fajita favorite-Pico de Gallo-is a highly flavored salsa. Literally translated, Pico de Gallo means tip of the cock's comb. And, if you are sensitive to chile heat, it just might make you jump higher than the tip of the cock's comb...which is how it was so named. The Aztec's created the banana leaf smoked red ripe jalepenos that we know today as chipotles. The brown, wrinkled dried ones yield the very most flavor-much better than the canned ones. The reddish mora style chipotles are mechanically dried and are far less flavorful. This salsa is wonderful on most any highly flavored smoked or grilled dish.

  2. 4 chipotles

  3. 1/2 cup water

  4. 2 teaspoons vinegar-such as cider or white

  5. 1 1/2 cups red ripe tomatoes, such as Romas, diced in

  6. 1/2 inch squares

  7. 3 cloves garlic, minced

  8. 3/4 teaspoon salt

  9. 1/3 cup freshly squeezed lime juice

  10. 1/2 cup cilantro leaves, coarsely chopped
