  2. 12 Flour Tortillas

  3. Chopped 1 c Cooked Chicken, Finely

  4. --FLAUTAS --

  5. 1 ds Pepper

  6. 1/2 ts Salt

  7. 2 tb Fresh Lime Juice

  8. 1 tb Vegetable Oil

  9. 2 tb Finely Snipped Cilantro

  10. 1 Finely Chopped Clove Garlic

  11. Finely Chopped 2 Jalapeno Peppers, Seeded And 1 md Chopped Onion

  12. 2 Finely Chopped Tomatoes

  13. 2 lg Ripe Avocados, Mashed

  14. Vegetable Oil For Frying

  1. Guacamole: Mix all ingredients in a glass or plastic bowl.

  2. Cover and refrigerate for at least 1 hour.

  3. Flautas: Spoon 1 tablespoon of the chicken across the bottom of each tortilla.

  4. Roll up tightly and secure with toothpicks.

  5. Heat 1 inch of oil to 350 degrees F.

  6. Fry flautas, turning once, until golden brown, about 2 minutes.

  7. Drain on paper towels; remove wooden toothpicks.

  8. Serve with fresh guacamole.
