  2. Grated lime zest 1 Teaspoon

  3. Lime juice 14 Cup (4 tbs)

  4. Cilantro leaves 2 Tablespoon

  5. Agave nectar/Honey 1 Tablespoon

  6. Unseasoned rice vinegar 1 Tablespoon

  7. Chopped garlic 1 Teaspoon

  8. Grapeseed oil/Light olive oil 14 Cup (4 tbs)

  9. Salt To Taste

  10. Ground black pepper To Taste

  11. Other ingredients

  12. Raw beets 1 14 Pound , grated

  13. Creamy citrus dressing 14 Cup (4 tbs)

  14. Crumbled goat cheese 2 Tablespoon

  15. Chopped fresh chives 2 Tablespoon

  1. Directions MAKING 1. In a food processor, combine the yogurt, lime zest, juice, cilantro, agave nectar or honey, vinegar and garlic and puree until smooth.

  2. While the machine is running, slowly drizzle in the oil until its incorporated. Season with salt and pepper.

  3. Toss the shredded beets with the dressing.

  4. Top with goat cheese and chives.

  5. SERVING 5. Serve at room temperature.

  6. NOTES:

  7. The dressing will keep in the refrigerator for about 2 weeks.
