  1. 2 lbs ground beef (90% lean)

  2. 2 eggs

  3. 1 cup Japanese bread crumbs

  4. 1 Table. granulated garlic

  5. 1 Table. dried basil

  6. 2 tsp. oregano

  7. 1 tsp. salt

  8. my additions:

  9. 3/4 cup frozen chopped spinach , thawed, wrung out

  10. 1 tsp. fennel , mortar and pestled to release essence

  11. angel hair pasta

  12. Marinara sauce--I stirred in 1/2 cup pork broth

  1. Preheat oven to 400 . Combine all ingredients and form into 3 to 4 oz meatballs. Grease a baking pan, and line the balls up. Cover with foil. Bake 25 mins. Check to see if cooked through. (I added 8 mins here) When thoroughly cooked, return to 400 oven for 10 minutes 'til lightly brown. Remove from oven and let the meat "rest" for 15 minutes. Transfer to warm marinara sauce, and hold in oven til dinner!
