  1. 2 (10 3/4 ounce) cans low-fat, low-sodium condensed cream of mushroom soup

  2. 1 large onion, chopped

  3. 3 pounds chuck roast

  4. 2 cups sliced carrots

  5. 1 pound small red potatoes

  6. 1/2 pound string beans

  7. 1/4 cup chopped parsley

  1. Mix cream of mushroom soup, chopped onion, and chuck roast in a slow cooker.

  2. Cook on High for 3 to 4 hours, or on Low for 8 to 9 hours. Add carrots, potatoes, string beans, and parsley 1 1/2 hours before the pot roast done.
