  1. Marinade:

  2. 1/2 tablespoon sugar

  3. 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce

  4. 1-2 tablespoons cornflour, mixed with

  5. 1 tablespoon water

  6. 450g pork fillet, sliced

  7. Sauce:

  8. 4 tablespoons white miso paste

  9. 125ml water

  10. 2 tablespoons mirin

  11. 1 tablespoon Japanese soy sauce (tamari)

  12. 2 tablespoons sake (rice wine)

  13. 1 tablespoon finely chopped garlic

  14. 1 tablespoon groundnut oil

  15. 1/4 of cabbage, finely chopped

  16. 1 teaspoon salt

  17. 12 yam bundles

  1. Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the pork, let marinate for 20 minutes.

  2. In a small bowl, mix together the miso paste, water, mirin, soy sauce and sake to make the sauce.

  3. Heat a large frying pan with 1 tablespoon oil over high heat. Stir fry the garlic until fragrant, 2-3 minutes. Stir in the pork and cook until done, about 4-5 minutes. Set aside.

  4. Heat the same frying pan with 1 tablespoon oil over high heat. Stir-fry the cabbage with 1 teaspoon salt until soft, 3-4 minutes. Stir in the sauce, yam bundles, pork and mix well. Heat, cover and simmer for 3 minutes. Adjust the seasoning accordingly and serve.
