  1. Creamy cashew chicken With saffron

  2. 1 lb. chicken , boneless, cut into small cubes

  3. 2 tbsp oil or 2 tbsp ghee

  4. 2 cardamom, pods

  5. sticks cinnamon

  6. 2 cloves

  7. 4 bay leaf

  8. 1/4 cup ground almonds or 1/4 cup ground cashew

  9. 1/2 cup light cream

  10. 1 pinch saffron , soak in

  11. 1 tbsp water or milk

  12. fresh cilantro , for garnish

  13. garam masala , for garnish

  14. 1 large onion , quartered

  15. 1/4 cup ground tomato

  16. 1/2 tsp garlic paste

  17. 1/2 tsp ginger paste

  18. 1/2 tsp chili powder

  19. 1/4 tsp turmeric powder

  20. 2 tsp cumin powder

  21. 2 tsp coriander powder

  22. 1 tsp salt

  23. 1 tsp lemon juice

  1. In a heavy bottom pot heat oil or ghee on a low heat. Add whole spices and sauté until they are slightly brown. Add paste mixture into pot with whole spices and fry until mixture is slightly browned. Add chicken cubes. Cover and cook over low heat until chicken is tender.

  2. Add ground nuts, cream and saffron. Cook further for 10 minutes until mixture is creamy and thick. Add a little water if necessary. Transfer into a serving dish and garnish with coriander leaves and garam masala.

  3. Paste Put all the paste ingredients in a food processor and process until smooth
