  1. Burgers

  2. 600g wagyu mince

  3. 2 cloves garlic, crushed

  4. Freshly ground black pepper

  5. 1 tsp fennel seeds, toasted, crushed

  6. tsp dried chilli flakes

  7. Good pinch salt

  8. Cooking oil

  9. Barbecue sauce

  10. 20g butter

  11. 1 medium onion, peeled, grated

  12. 1 clove garlic, crushed

  13. 2 tbs Worcestershire sauce

  14. 1 tsp coffee powder

  15. 2 tbs malt vinegar

  16. cup brown sugar

  17. cup tomato sauce

  18. 1 tbs Dijon mustard

  19. Sliced tomato, sliced beetroot, grated carrot, lettuce leaves and burger buns, to serve

  1. Mix burger ingredients (mince, garlic, pepper, fennel seeds, chilli flakes, salt) together and shape into patties. Set aside.

  2. Heat butter in small saucepan and cook onion and garlic until they soften. Add remaining sauce ingredients (Worcestershire sauce, coffee powder, malt vinegar, brown sugar, tomato sauce, mustard) and bring to a boil; simmer 5 minutes or until thickened.

  3. Meanwhile, heat flat plate of barbecue to very hot and brush with a little oil. Cook patties 5-7 minutes each side or until cooked through.

  4. Once burgers are cooked through, set aside while you prepare the buns. Toast cut sides of buns lightly on grill side of barbecue and top each half with a little of the barbecue sauce. Arrange tomato, beetroot, carrot, lettuce and any other ingredients you wish on top of the bottom half of the bun, then top with burger and other half of the bun.

  5. Serve immediately.
