  1. 2 tbsp olive oil

  2. 4 cups zucchini sliced thinly about 1/4" or thinner

  3. sausage Mixture:

  4. 1 small onion chopped

  5. 1 tsp salt

  6. 1/2 tsp nutmeg

  7. 2 large chopped garlic cloves

  8. 1/2 tsp thyme

  9. 1/4 tsp sage

  10. fennel seed to taste

  11. 5 shakes of Tabasco

  12. 1 pound ground turkey

  13. 1 cup bread crumbs

  14. Cheese sauce:

  15. 1/4 cup cold milk

  16. 2 tbsp cornstarch

  17. 1-1/4 cup hot milk

  18. 1 cup grated cheese

  19. 3 beaten eggs

  1. Lightly saute zucchini in oil just until crisp and tender, remove from pan

  2. Mix sausage ingredients (onion thru turkey) and mix well, saute in pan and brown, set aside and cool

  3. Add bread crumbs to cooled turkey mixture

  4. To make cheese sauce:

  5. Blend cornstarch and cold milk together and stir into hot milk

  6. Stir constantly until thickened about 2 minutes (DO NOT BOIL)

  7. Blend in the cheeses

  8. Add beaten eggs to cooled turkey mixture

  9. Layer cheese sauce, zucchini mixture and turkey mixture in a baking dish in 2 layers (start with cheese sauce and end with cheese sauce)

  10. Cover and bake

  11. 350 for 30 minutes or till bubbly

  12. Can make ahead and freeze till ready to bake
