  1. 1 small onion , cut into thin

  2. 16 ounces chuck roast

  3. 1/8 teaspoon salt

  4. 1/8 teaspoon ground black pepper

  5. 1 clove garlic, minced

  6. 3/4 cup whole cranberry sauce

  7. 1 teaspoon finely chopped canned chipotle chile peppers in adobo sauce

  8. 1 cup instant rice

  1. Place onion in 1 1/2 quart crockpot.

  2. Cut beef into bite size chunks and add to crockpot.

  3. Sprinkle with salt, black pepper and garlic.

  4. Combine cranberry sauce and chipotle peppers.

  5. Pour over all ingredients.

  6. Cover and cook on low for 6 to 8 hours.

  7. To serve, cook rice according to package directions, omiting butter and salt.

  8. Combine beef mixture with rice, serve hot.
