  1. 9 each red chili peppers dry

  2. 1/2 cup shallots peeled and sliced

  3. 1/4 cup garlic cloves chopped

  4. 2 tablespoons galanga root cut to strips.

  5. 1/4 cup lemon grass sliced

  6. 1 tablespoon kaffir lime rind cut fine.

  7. 2 tablespoons coriander seeds

  8. 1 tablespoon fennel seeds

  9. 1 tablespoon kapi paste (shrimp/fish paste)

  10. 2 teaspoons salt

  11. 2 teaspoons sweet bell peppers*

  1. Cut open dry red chili pods.

  2. Discard seeds, and soak in water for a few minutes.

  3. Put all ingredients in a mortar and pound till mixed finely.
