  1. Egg (hen's) - 6 no

  2. Cabbage 1/4 cup

  3. cauliflower 1/4 cup

  4. capsicum (finely chopped) - 1/4 cup

  5. Onion - 1

  6. Green chillies - 3

  7. Curry leaves

  8. Salt - to taste

  9. Oil - as required

  10. Turmeric powder - 1/4 tsp

  1. Chop onion, green chillies and curry leaves finely.

  2. Beat the egg with turmeric powder and salt.

  3. Heat oil in a kadai, add chopped onion, green chillies, curry leaves and chopped vegetables.

  4. Sauté till it is cooked and let it cool.

  5. Add it to the egg mixture, mix well and pour it into omelets with oil all around.

  6. Serve hot.

  7. Note:

  8. If you add the turmeric powder directly in egg it will form lumps. It never will dissolve. In order to avoid this, prepare a thick paste of turmeric and salt adding a little water. Add egg to the paste and beat it. Turmeric will dissolve smoothly. Make sure that the container is dry so that the egg will form excellent foam with right beating
