  1. The salad:

  2. 1 lb uncooked pasta. I usually use three color rotini but any short pasta type will do.

  3. 2 - 3 cups frozen mixed veggies, to taste. I use the carrot, green bean, pea and corn mix.

  4. 2 - 3 Tbs chopped ripe olives, to taste.

  5. 2 - 4 sliced fresh mushrooms, depending on size.

  6. The dressing:

  7. 1 cup real mayonnaise.

  8. 1 tsp Dijon mustard, to taste.

  9. 2 Tbs dry white wine or vinegar, to taste.

  10. A pinch of sweet basil.

  11. A sprig of cilantro, chopped.

  12. 1 tsp chili powder, to taste.

  13. Salt and fresh ground pepper to taste.

  1. Cook the pasta just al dante, rinse with cold water and drain 2. Mix all of the Dressing ingredients together until smooth and creamy.

  2. Mix all of the salad ingredients and the dressing in a large bowl and toss until well mixed.

  3. You can garnish this with a few sprigs of parsley or cilantro.
