  1. 3 lbs. lean chuck or rump roast

  2. Vegetable cooking 2 Tablespoon

  3. 2 cloves garlic, crushed or 1/4 t. garlic powder

  4. Onions 2 Medium , chopped

  5. Dried oregano 1/2 Tablespoon

  6. Thyme 1 Tablespoon

  7. Basil leaves 1/2 Tablespoon

  8. Cinnamon 1/8 Tablespoon

  9. Salt 1 Tablespoon

  10. Black pepper 1/4 Tablespoon

  11. Sugar 1/2 Tablespoon

  12. Tomato Paste 2 Can (10oz)

  13. Water 3 Cup (16 tbs)

  14. 1 lb. thin noodles

  15. Grated parmesan cheese and chopped chives

  1. Directions Brown meat slowly on all sides in hot vegetable oil.

  2. Remove meat and lower heat.

  3. Add garlic and next 8 seasonings.

  4. Simmer about 5 minutes being careful not to burn.

  5. Return meat.

  6. Mix tomato paste with water and pour over meat.

  7. Bring to a full boil.

  8. Lower heat and cover loosely.

  9. Simmer slowly about 2 to 3 hours, turning meat occasionally.

  10. When meat is tender, cook noodles and drain.

  11. Slice the roast and arrange with noodles and cover with sauce.

  12. Sprinkle with cheese and chives if desired.

  13. Makes about 6 servings.
