  1. 8tbsp olive oil

  2. 3tbsp lemon juice

  3. 1 clove garlic, peeled, crushed

  4. 2 level tbsp chopped fresh parsley

  5. Salt and ground black pepper

  6. 2 x 400g bags of frozen mixed seafood, defrosted and drained

  7. 1 bulb fennel, trimmed and thinly sliced

  8. Chicory, to serve

  9. Fennel fern tops, to garnish

  10. Ciabatta, to serve

  1. Place all the ingredients for the dressing in a bowl ready to whisk together.

  2. Make a dressing by whisking together the oil, lemon juice, garlic, parsley and seasoning.

  3. Stir in the drained seafood and fennel and mix well (Don't add the fish and fennel more than 30 mins before serving).

  4. Serve on a bed of chicory leaves and garnish the top with sprigs of fennel or dill. Serve with warm ciabatta, to soak up the juices.
