  1. 1/2 cup water

  2. 1/4 cup packed light brown sugar

  3. 1/4 cup Thai fish sauce

  4. 2 cloves garlic finely chopped

  5. 2 tablespoons finely chopped cilantro

  6. 1 tablespoon white peppercorns crushed

  7. 1 pound large shrimp in their shells

  8. cilantro sprigs for garnish

  1. Combine water, sugar and fish sauce in a large saucepan and bring to simmer over low heat.

  2. Stir constantly until sugar dissolves then add garlic, cilantro and peppercorns and bring to a boil.

  3. Cook over moderate heat until boiling then cook until sauce is slightly thickened.

  4. Add shrimp and cook stirring constantly until shrimp are opaque and just cooked through.

  5. Remove from heat and cool to room temperature then chill 1 hour.

  6. Toss shrimp in sauce often then drain with a slotted spoon and serve garnished with cilantro.
