  1. 4 Boneless, skinless chicken breast halves

  2. 2 tablespoons 30ml Orange juice

  3. 2 tablespoons 30ml Soy sauce

  4. 1/4 teaspoon 1 1/3ml Sesame oil

  5. 1 Garlic - minced

  6. Spicy Peanut Sauce

  7. 2 tablespoons 30ml Finely chopped fresh cilantro

  8. 3 tablespoons 45ml Warm water

  9. 3 tablespoons 45ml Chunky peanut butter

  10. 1 teaspoon 5ml Brown sugar

  11. 1/2 teaspoon 2 1/2ml Red pepper flakes - crushed

  12. 1/2 teaspoon 2 1/2ml Soy sauce

  1. Cut each chicken breast half into 8 cubes. Thread 4 cubes onto each of 8 skewers. Place in an ungreased shallow dish or 13 x 9-inch baking dish.

  2. Combine orange juice, soy sauce, oil and garlic; mix well. Pour over chicken; let stand at room temperature 15 minutes, turning once.

  3. Combine sauce ingredients and set aside.

  4. Line broiler pan with foil; broil chicken 4 - 6 inches from heat 6 - 8 minutes or until chicken is no longer pink, turning once.

  5. Serve immediately with sauce.

  6. If desired, longer skewers can be used. Alternate chicken with cut up vegetables such as red or green peppers and mushrooms. Marinate and broil as directed above.
