  1. 1/3 cup olive oil

  2. 1 tablespoon fresh lemon juice

  3. 1 tablespoon fresh lime juice

  4. 2 tablespoons cider vinegar

  5. 1 crushed garlic clove

  6. 1/4 teaspoon salt

  7. 1/8 teaspoon black pepper

  8. 1/8 teaspoon dried basil

  9. 1/8 teaspoon dried oregano

  10. 8 mushrooms , sliced

  11. 6 cups fresh baby spinach

  12. 8 -10 grape tomatoes , halved

  13. 1/2 red onion , sliced thin

  14. 4 slices bacon , cooked and crumbled

  1. Mix all dressing ingredients together and refrigerate for flavors to develop.

  2. Add mushrooms to dressing and toss to coat.

  3. Refrigerate mushroom mixture for at least 30 minutes.

  4. Just before serving, place spinach in a salad bowl with tomatoes and onions; add mushroom mixture and toss together.

  5. Top with crumbled bacon.
