  1. 150g sugar

  2. 2 teaspoons vanilla extract

  3. 125g margarine or butter

  4. 2 tablespoons cocoa powder

  5. 1 egg

  6. 190g self raising flour

  7. 60ml milk

  8. 2 tablespoons icing sugar, for dusting

  1. Preheat oven to 180 C / Gas 4. Line a cupcake tin with 12 cupcake cases.

  2. Melt the sugar, vanilla and butter or margarine in a saucepan over a medium heat. Remove from heat.

  3. Add the cocoa powder to the butter mixture; mix well. Add the egg. Mix well. Stir in the flour and the milk. Scoop into the prepared tins.

  4. Bake for 30 minutes or until knife inserted in the centre comes out clean.

  5. Leave to cool and dust with icing sugar.
