  1. Splash olive oil

  2. 1 brown onion finely chopped

  3. 1 small leek , white part finely chopped

  4. 5 cloves garlic crushed

  5. 6 fresh ripe tomatoes , roughly chopped

  6. 1 bottle tomato puree (pasata)

  7. herbs from the garden (rosemary, thyme, basil and oregano)

  8. 1 cup water

  9. salt , pepper and sugar

  10. 8 yummy italian sausages (i like the fat pork and fennel sausages )

  1. Fry onion, leek, garlic and herbs.

  2. Add fresh tomato and sauté few minutes.

  3. Add bottle tomatoes, water and seasoning and simmer for few minutes Cut end off sausages and pipe filling out into small meatballs.

  4. Simmer in the sauce until cooked through and serve over pasta.
