  1. 4 pork cutlets

  2. 1/2 teaspoon cracked black pepper

  3. 3 large potatoes, peeled and quartered

  4. 4 zucchini, chopped

  5. cooking oil spray

  6. 2 garlic cloves, crushed

  7. 1/4 cup (60ml) hot milk

  1. Season pork cutlets with cracked black pepper and set aside. Place potatoes in a saucepan with enough salted water to cover. Bring to boil. Cook for 12-15 minutes, until tender. Add zucchini for last 5 minutes. Drain.

  2. Meanwhile, spray pork cutlets with oil. Heat a large frying pan on high. Cook pork cutlets for 4 minutes each side, until tender.

  3. Mash vegetables in a heated bowl. Beat in garlic and milk. Season to taste.

  4. Serve with pork cutlets.
