  1. 1 ripe avocado , diced

  2. 1 large lime, juiced and 1/2t zest

  3. 1 green onion , sliced

  4. 1/2 cup olive or salad oil

  5. 1 rounded T canned diced chilies (mild or hot, your preference)

  6. 2 cloves garlic , minced

  7. 1/4 cup fresh cilantro

  8. 1/2 cup mayonnaise

  9. 1t Mexican oregano

  10. kosher or sea salt and fresh ground black pepper

  1. Combine all ingredients, except salt and pepper, in blender or food process and process until smooth and creamy. Add a bit more oil, if needed, for desired consistency.

  2. Season with salt and pepper and mix to combine.

  3. Dress salad as desired.
