  1. 1 cup bulgur wheat

  2. 3 Tbsp. olive oil

  3. 1/4 cup lemon juice

  4. 3 oz. kalamata olives, halved

  5. 4 oz. feta cheese, chopped

  6. 1/2 cup cucumber, chopped

  7. 6 oz. grape tomatoes, halved

  8. 3/4 cup garbanzo beans

  9. 1 spinach, chopped

  10. 1 Tbsp. red onion, minced

  11. 3 cloves of garlic, minced

  12. 1 Tbsp. mint

  1. Boil 2 cups water, when boiling add 1 cup bulgur. Reduce to simmer and cook with lid on for 20 minutes or until done.

  2. Once the bulgur is cooked add the rest of the ingredients when still warm.

  3. Serve and enjoy!
