  1. 2 medium chicken breasts

  2. 4 thai chillis

  3. 4 garlic cloves

  4. 3 tablespoons vegetable oil

  5. 3 cups mixed asian vegetables (include bok choy, gai larn, zuccinni, carrots , shitake mushrooms etc)

  6. 2 tbls hoi sin sauce

  7. 2 tsp fish sauce

  8. 2 tsp light soy sauce

  9. 3 generous bunches thai basil leaves

  1. Slice the chicken breast 1/2 centimetre thick Finely chop chilli Finely grate garlic Chop vegetables evenly Add half the chilli and garlic to the chicken and mix well throughout Add the other halves of the chilli and garlic to the vegetable mix Heat 2 tbls of oil in a wok until the oil nearly starts to smoke Toss in chicken and stir fry until nicely browned, but do not overcook Place chicken on plate to rest Heat another 1 tbls oil Toss vegetables and cook until slightly done Throw in chicken and mix well with vegetables Add all sauces and mix well constantly Cover 2 minutes so that vegetables cook a little more Turn heat off and add basil leaves Mix well and serve with steamed rice preferably jasmine.
