  1. 2 cups brown rice (cooked)

  2. 1/4 cup chopped parsley (or use dried)

  3. 1/4 cup chopped scallion (or 1 med. onion)

  4. 1 cup shredded cheddar cheese (or use vegan cheese)

  5. 1 1/2 cups silken tofu

  6. 1/4 cup plain soymilk (or milk)

  7. 2 teaspoons ground pepper

  8. 2 tablespoons herbs (thyme, sage, basil, rosemary)

  9. 2 teaspoons hot sauce

  10. 1 unbaked pie shell

  1. Preheat over to 375 degrees.

  2. Combine rice, parsley, scallions (or onions)and cheese. (You may saute onions first.).

  3. In blender, combine tofu, milk, pepper, spices and hot sauce until well mixed.

  4. Combine rice and tofu mixtures.

  5. Pour into crust.

  6. Bake for 30 minutes or until set.

  7. Serve hot.

  8. (I think it takes even better the next day when the flavors have blended and mellowed.).
