  1. Coconut Cilantro Lime Sauce:

  2. 1cup sour cream

  3. 1 cup mayonnaise

  4. 1/2 cup coconut milk

  5. 1/4 cup lime juice

  6. 4 tablespoon chopped fresh cilantro

  7. 2 tablespoon apple cider vinegar

  8. 4 large garlic cloves minced

  9. Deep Fried Mahi Mahi Fingers:

  10. 3 pounds fresh Mahi Mahi fillets cut into 2" by

  11. 3" pieces

  12. 3 large eggs beaten

  13. 1 1/2 cup all purpose flour

  14. 3/4 cup rice flour

  15. 2 tablespoon Seafood seasoning

  16. 2 teaspoons salt

  17. 1 teaspoon pepper

  18. Vegetable oil

  2. Combine all ingredients, and stir well with a whisk. Cover sauce, and chill.

  3. Deep Fried Mahi Mahi Fingers:

  4. In a bowl, beat the egg. In a large bowl add all purpose flour, rice flour, seafood seasoning, salt and pepper. Mix the ingredients well. Preheat fryer adding the oil and following directions. Place Mahi Mahi into egg mixture and make sure pieces is all coated with egg mixture. Place the Mahi Mahi into the flour mixture, making sure Mahi Mahi is coated. Fry in batches in the hot oil or at about 370° until golden brown. Drain on rack and season with salt and pepper if desired. Serve with a dipping cup of Coconut Cilantro Lime sauce. Yield: serves 4 Notes: This is absolutly great for a game, movie or while relaxing.
