  1. 4 low fat whole wheat tortillas

  2. 1 cup salsa

  3. 1 1/2 cups shredded. cooked chicken breast

  4. 3/4 cup prepared black beans, rinsed and drained

  5. 1/2 cup frozen corn, thawed

  6. 1 1/2 cups reduced fat monterey jack or cheddar cheese

  1. Preheat oven to 450 degrees. Place tortillas on a sheet pan and spread 1/4 cup salsa on each one. Sprinkle chicken, black beans and corn over salsa. Sprinkle cheese over. Bake 8 to 10 minutes or until cheese is melted. Serve with low fat sour cream and diced tomato.
