  1. 7 cups cubed red potatoes, uncooked

  2. 8 ounces small curd cottage cheese

  3. 1/2 cup sour cream

  4. 1/2 cup Velveeta cheese , cubed

  5. 1 tablespoon dried onion flakes

  6. 2 garlic cloves , minced

  7. 1/2 teaspoon salt

  8. paprika , for garnish

  9. minced chives , for garnish

  1. Place cubed potatoes in crock pot.

  2. In a food processor or blender, puree the cottage cheese and sour cream until smooth.

  3. Combine Velveeta, onion, garlic and salt with cottage cheese/sour cream blend, mix well.

  4. Pour over potatoes and mix well.

  5. Cover and cook on low for 5-6 hours or until potatoes are tender.

  6. Stir before serving and garnish with paprika and chives.
