  1. Ingredients :Makes 60 cookies

  2. 90 g 1/4 teaspoon 4 250 g 1 teaspoon Flour

  3. Baking powder

  4. Egg whites

  5. Sugar

  6. Lemon zest

  1. Preheat oven to 190 o C (375 o F). Sifttogether flour and baking powder then set aside.

  2. Beat egg whites until they are slightlystiff.

  3. Gradually add sugar and continue beatinguntil stiff peaks form.

  4. Fold in flour mixture to form a batter.

  5. Add lemon zest.

  6. Drop rounded teaspoonfuls of the batteronto greased and floured baking trays. Bake in preheated oven for 8-10minutes or until the tops of the cookies become light brown.

  7. Loosen immediately from the baking traysso that cookies don't stick.

  8. Cool, then store in airtight containers.
