  1. 1/2 lb bacon , cut into 1/2 inch pieces

  2. 1 large apple , diced

  3. 1 large onion , diced

  4. 6 -8 cups kale (beet greens or swiss chard use a mix of them)

  5. 5 roasted garlic cloves, mashed

  6. 1 tablespoon honey

  1. In a large frying pan cook bacon till crisp, drain and discard fat.

  2. Add onions, and apples cook for 4 minutes.

  3. Remove stems from greens and slice into 1/4 inch lenghts. Add to the apple mixture cook for 8 minutes.

  4. Chop the greens.

  5. Add garlic, honey and chopped greens. Stir in and simmer 5 minutes.
