  1. Boneless chicken - breasts or thighs cut down into large or small strips.

  2. 2 T. olive oil

  3. 1/2 onion diced.

  4. mushrooms if desired

  5. 2 cloves garlic

  6. vegetables

  7. Your choice of three or more of the following:

  8. celery diced

  9. green peppers

  10. broccoli

  11. cauliflower

  12. diced carrots

  13. zucchini sliced

  14. asparagus

  15. sugar peas

  16. water chestnuts

  17. or cabbage chopped

  18. Or almost any other vegetable that you can think of.

  19. noodles - dried like Ramen or fresh noodles your choice

  20. fresh spinach

  21. Spices:

  22. garlic sea salt in Grinder

  23. black pepper in Grinder

  24. Your choice of the following spices depending on the flavor you are going for:

  25. For a south taste:

  26. A good meat rub with low salt content

  27. or a mix of cajun spices

  28. For an oriental feel:

  29. ginger

  30. Cinamon

  31. Chinese 5 spice

  32. a drop or two of soy sauce

  33. For a curry flavor add curry spices

  34. You may add nuts to the mix at the same time you add your vegetables

  35. orange or half a lime may be added to change the flavor dramatically.

  36. Flavored jelly can be added to the chicken while the chicken and onions are cooking.

  37. Bottled sauce can be added in small amounts such as ginger sauce when sauteing the onions and chicken

  38. If the pan seems to be getting dry and you think you need more oil in the pan, add just a touch of water to the bottom of the pan rather than adding more oil

  1. Base:

  2. Using a stir fry pan add oil to heated wok and then add chicken to cover bottom of wok.

  3. Add onions and saute on medium until onions and chicken are lightly browned.

  4. Add garlic and mushrooms to the mix and saute until mix is more of a golden brown.

  5. Push saute up side of wok and begin adding vegetables.

  6. Begin with the longer cooking vegetables like carrots and keep adding vegetables unitl still firm, but lightly browned. Do not add the spinach at this step.

  7. Once the vegetables look mostly done, push them up the side of the wok and add about 1 cup of water to the bottom of the wok. Break noodles to desired length if necessary. Add noodles to middle bottom of wok and cover. Allow noodles to steam for about 10 minures or until done.

  8. Mix all the ingredients together when noodles are done and then spice to taste for your flavor of the day.

  9. Cover entire mix with spinach as full as possible in wok. Cover and allow the spinach to steam. This should take about 5 minutes. The spinach will cook down and you will want to mix all the ingredients together well.

  10. Serve over rice if desired.
