  1. 1 lb. boneless pork loin, trimmed and cut into 1 x 1/2 x 1/4 inch strips

  2. 1 package taco seasoning mix

  3. 1 tbsp. oil

  4. 1 c. salsa

  5. 1 c. canned spicy chili beans, unstrained

  6. 1/4 c. apricot preserves

  7. 3 medium Roma tomato es, diced

  8. 6 scallion s, sliced thinly

  9. 10 black olive s, sliced

  10. 1/2 - 3/4 c. sour cream

  11. Yellow corn tortilla chips

  1. In shallow bowl, combine pork and taco seasoning mix; toss to coat. Heat oil in large skillet over medium-high heat until hot. Add pork; cook and stir 3-5 minutes or until no longer pink. Stir in salsa, beans and preserves. Reduce heat to low; simmer 10-12 minutes or until thoroughly heated, stirring occasionally. Serve in bowls, and top with 1-2 tbsp. sour cream. Garnish with tomatoes, scallions and olives. Scoop salsa-style onto tortilla chips to eat.
