  1. 4 chicken breast, skinned and trimmed of excess fat

  2. Rind and juice of 2 limes

  3. 2 tablespoons palm sugar

  4. 3 cups shredded Chinese cabbage

  5. Cooking oil spray

  6. 1 1/2 cups coarsely grated carrot

  7. 1 firm mango, peeled and finely sliced

  8. 1 cup chopped coriander

  9. 1 tablespoon rice bran oil

  1. Place chicken in a shallow dish. Combine lime rind, juice and palm sugar in a jug. Stir until sugar dissolves. Pour half over chicken, turning to coat.

  2. Heat a chargrill or frying pan on high. Lightly spray with oil. Cook chicken for 3-5 minutes each side, basting with marinade, until cooked through.

  3. Meanwhile, place cabbage, carrot, mango, coriander, oil and remaining lime dressing in a bowl. Season to taste and toss to combine. Slice chicken and serve with coleslaw.

  4. Tip: Make the most of the delicious seafood currently available by replacing chicken with prawns or calamari.
