  1. 3 Gala or Golden Delicious apples, peeled, cored and chopped

  2. 2 cups mixed, diced candied fruit, plus more for garnish if desired

  3. 1 1/2 cup chopped pecans, plus more for garnish if desired

  4. 1 cup chopped dates

  5. 3 cups all-purpose flour, divided

  6. 1 teaspoon baking powder

  7. 3/4 teaspoon ground cinnamon

  8. 3/4 teaspoon ground nutmeg

  9. 1/2 teaspoon ground allspice

  10. 1/2 teaspoon ground cloves

  11. 1/2 teaspoon salt

  12. 1/4 teaspoon baking soda

  13. 1 cup vegetable shortening

  14. 3/4 cup granulated sugar

  15. 3/4 cup packed light-brown sugar

  16. 4 large eggs

  17. Sugar Icing:

  18. 1 1/2 cup confectioners' sugar

  19. 2 tablespoons butter or margarine

  20. 1 teaspoon rum flavoring

  21. 1 to 2 tablespoons milk

  1. Preheat oven to 300 degrees F. Grease a 10-inch tube pan; line bottom withwaxed paper and grease again. In medium bowl, combine apples, 2 cupscandied fruit, and 1 1/2 cups chopped pecans, and the dates; sprinklewith 1/2 cup flour and mix well; set aside.

  2. In medium bowl, combine remaining 2 1/2 cups flour, the baking powder,cinnamon, nutmeg, allspice, cloves, salt and baking soda; set aside. Inlarge bowl with electric mixer, beat shortening and both sugars untilfluffy. Add eggs, one at a time, beating well after each addition. Adddry and beat until smooth. Stir in reserved fruit mixture.

  3. Spread batter in prepared pan. Place pan of water in oven withfruitcake. Bake 2 to 2 1/2 hours or until wooden pick inserted nearcenter comes out clean. Cool in pan.

  4. For Sugar Icing: In medium bowl, blend confectioners' sugar and butter or margarine. Add rum flavoring and milk; mix until smooth and spreading consistency.

  5. To serve, frost top of fruitcake with icing and garnish with candied fruitand pecan halves, if desired.
