  1. For the Twinkies:

  2. 1 cup sugar

  3. 2 eggs

  4. 1 1/4 cup unbleached all purpose flour

  5. 1/2 cup milk

  6. 1/3 cup oil

  7. 1 tsp baking powder

  8. 1 tsp vanilla

  9. For Whipped Filling

  10. 1/3 cup shortening

  11. 1/4 cup sugar

  12. 1/2 tsp vanilla

  13. 1/4 cup milk

  14. 1/2 cup powdered sugar

  1. Preheat the oven to 350. Beat the eggs and sugar for one minute until slightly thickened. Mix in other ingredients, just blending until combined. Divide batter between three greased mini loaf pans, or 6 cupcakes. Bake for half an hour, until puffed and golden brown, and when you insert a toothpick into the cake it comes out clean. Cool cakes in pans, then remove to a cutting board.

  2. With a sharp knife, carefully cut out rectangles from the bottom. Scrape out the insides carefully, and eat them, but saving a strip of rectangle to put back on. Fill with whipped filling, put the little caps back on.

  4. For Whipped Filling Mix the first four ingredients for 6-7 minutes , then add the confectioners sugar and beat another 5 minutes
