  1. 450 g green olives , in brine, rinsed and pitted

  2. 2 stick celery

  3. 2 carrots , sliced

  4. 2 cloves garlic , sliced

  5. 1/2 sweet green pepper , roughly chopped

  6. 1 tbsp dried oregano

  7. 1/2 tsp dried red chilli flakes

  8. 125 ml olive oil

  9. 1 tbsp white wine vinegar

  10. bread , to serve

  1. Mix all ingredients together and let stand for 12 hours.

  2. Serve with bread to soak up oil.
