  2. 500 g 2-5 1 1/2 1 1 tablespoon Sauce

  3. 2 tablespoons 2 tablespoons 2 cloves

  4. 2 1 1 1/2 cm Squid, cleaned

  5. Ginger knob, peeled and julienned

  6. Spring onion (scallion), cut into 3 cm lengths

  7. Onion, peeled and sliced

  8. Red chili, julienned

  9. Rice wine

  10. Fish sauce

  11. Sugar

  12. Garlic, peeled and finely chopped

  13. Red chili, finely chopped

  14. Lime juice

  15. Ginger, peeled and finely chopped

  1. Combine all sauce ingredients. Mix welland set aside.

  2. Slit open squid tubes and flatten.

  3. Make diagonal cuts on the inner surfacethen slice.

  4. Place squid on a deep heatproof(flameproof) plate and cut top with ginger, spring onion, onion andchili.

  5. Pour rice wine over.

  6. Steam for 10 minutes.

  7. Serve hot with sauce on the side.
