  1. 8 slices bacon, diced

  2. 3/4 cup dry white wine

  3. 1/4 cup chopped green onions

  4. 4 pork chops, loin, about 1 inch thick

  5. salt and pepper

  6. 2 tablespoons flour

  7. 4 tablespoons butter

  8. 1/2 cup whipping cream

  9. 1 teaspoon Dijon mustard

  10. 1 tablespoon chopped parsley

  1. Combine diced bacon, wine, and green onions; let stand for 20 minutes. Drain and reserve the wine. Season pork chops with salt and pepper then dredge in flour. Heat butter in a large skillet. Brown the pork chops over medium heat for about 7 minutes on each side. Add the bacon and green onions. Cook for about 4 minutes. Add the reserved wine and cream; cover and simmer for 10 to 12 minutes, or until chops are tender. Remove the pork chops to a warm serving plate. Simmer cream sauce for 3 minutes longer; add mustard and parsley to the sauce and heat through.
