  1. 3 pounds small red potato es, halved and sliced crosswise

  2. 1/4 inch thick

  3. 1 1/2 Kalamata olive s sliced into slivers

  4. 2 unpeeled garlic cloves

  5. 1 tablespoon chopped fresh oregano

  6. 2 tablespoons red- wine vinegar

  7. 1/2 cup olive oil

  8. 1 cup crumbled feta cheese

  9. 1/2 cup chopped fresh parsley

  10. fresh ground pepper to taste.

  1. In a steam set over boiling water steam the potatoes in batches, covered for 6 to 8 minutes, or until they are just tender and in a large bowl combine them with the olives. In a small saucepan of boiling water boil the garlic for 5 minutes and peel it. In a blender puree the garlic with the oregano, vinegar and the oil, add the feta and blend the dressing until it is combined well. Toss the potato mixture with the dressing, the parsley, the pepper and salt to taste.
