  1. 1 cup butter, softened

  2. 1 cup sugar

  3. 1 egg

  4. 1 teaspoon vanilla extract

  5. 2-1/2 cups all-purpose flour

  6. 1/2 cup chopped pistachios

  7. 1 jar (18 ounces) apricot preserves

  8. Additional chopped pistachios, optional

  1. Pistachio Apricot Bars Recipe photo by Taste of Home In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg and vanilla. Gradually add flour to creamed mixture and mix well. Stir in pistachios. Press into a greased 13-in. x 9-in. baking dish. Spread with preserves.

  2. Bake at 350° for 25-30 minutes or until edges begin to brown. Cool on a wire rack. Cut into bars. Garnish with additional pistachios if desired. Yield: 2-1/2 dozen.
