  1. 6 servings 1 c long-grain white rice -- uncooked

  2. 1/2 tsp olive oil

  3. 1 c onions -- chopped

  4. 1 c celery -- sliced

  5. 1 clove garlic -- minced

  6. 15 ozs pinto beans, canned -- drained and washed

  7. 8 ozs no-salt-added tomato sauce

  8. 1/2 c water

  9. 1 tbsp ketchup

  10. 1 tsp chili powder

  11. 1/4 tsp hot pepper sauce

  12. Prepare rice according to package directions. In a skillet, heat oil over medium heat. Add onions, celery, and garlic. Cook and stir until crisp-tender. Add pinto beans, tomato sauce, water, ketchup, chili powder, and hot pepper sauce. Heat thoroughly, stirring occasionally.
